The Old Clare Hotel launches in Sydney

Having completed its renovation of two listed buildings in Sydney, Unlisted Collection’s new boutique development is now open for business – the 62-key Old Clare Hotel.

Two heritage buildings – the former Clare Hotel pub and the Carlton & United Breweries Administration Building – have been adjoined by a glass link-way, engineered by the Tonkin Zulaikha Greer Architects. The result is a design-led property, constructed with close attention to detail and a focus on retaining as many original features as possible.

The 62 rooms and suites are categorised into seven distinctive types, and all feature high ceilings, large original framed windows, heritage timber panelling and original exposed walls. Highlights include the heritage C.U.B. Suite, which features separate sleeping quarters, ample meeting, living and dining space with an eight-seater table and an anteroom with library. Meanwhile, the Chippendale Lofts are both contemporary and spacious, featuring a private bedroom with open white marble bathroom and sitting area over two levels.

Quirky objects and fixtures have been selected to furnish each space, with .PSLAB pendant lights, vintage furniture, custom tote bags, and cushions inspired by Australian fauna and flora, created by Eloise Rapp. Furthermore, Maison Balzac has created a bespoke and welcoming scent to be diffused throughout the hotel.

Downstairs, The Clare bar adjoins the reception, while upstairs, a rooftop pool and bar offers panoramic views of the surrounding district. Additional amenities at The Old Clare Hotel include a private gym and a heritage meeting space, with a spa set to open in 2016.

The Old Clare Hotel’s opening is accompanied by the launch of three restaurants as part of the development: Automata, Clayton Wells’ first solo restaurant, serves a constantly changing five-course menu, and has opened on Kensington Street; Silvereye, situated on level two of the hotel is by former Noma chef, Sam Miller, and will offer two tasting menus; while Kensington Street Social, the one-hundred-seat all-day venue from long-term Unlisted Collection partner Jason Atherton, will round out the restaurant openings.
