Michael Caines set for hotel debut
Acclaimed Chef Michael Caines is set to make his hotelier debut this summer, showcasing two newly renovated properties: Palé Hall in North Wales and Lympstone Manor in Devon projected for early 2017.
Having finished his final service at Gidleigh Park in January 2016 and winning two Michelin stars, Caines is using his years of experience in the luxury hospitality sector to add hotelier to his resume.
Residing on the edge of Snowdonia National Park within a dramatic 50-acre estate, Palé Hall is a historic, Grade II listed country house that is currently under-going an extensive refurbishment programme projected for summer 2016. Debuting as a fine dining, luxury destination country house hotel, the Victorian property is currently undergoing an innovative restoration project. New owners Alan and Angela Harper, are personally overseeing the project in association with Caines, who will be developing an exclusive fine dining restaurant for the property.
The hotel will Feature 18 individually designed guestrooms and suites, each with a unique charm and rural views. Original period features have been retained as much as possible with individual pieces of furniture and art adorning the property, including hand-stenciling wall decoration to match the original details uncovered during the process.
The three dining room spaces will host breakfast, lunch, afternoon tea and dinner through Caines’ signature menu that focuses on local produce.
Having purchased Courtlands, a Grade II listed Georgian mansion located on the Exe estuary, Caines is also currently renovating, restoring and extending the property to create Lympstone Manor.
The property is set to open in 2017 as a 21-guestroom luxury country house hotel with a 60-seat fine dining restaurant featuring Caine’s signature, award-winning modern European cuisine that utilises the local produce of Devon and the South West. Caines will express his own vision of hospitality in all aspects, creating a property that blends seamlessly with its surroundings, retaining a passion for food and wine at its heart.
